GLYCERINE FOR CONFECTIONERY

Useful for thickening, stabilizing and sweetening. Applicable in chocolates, mousses and aponges, ganaches  and in pastes or sugar masses: such as fondant , pastillage and gum paste.

HOW TO USE

• It has a great ability to attract moisture. Resistant to freezing, but can crystallize at low temperatures. It has in prepared foods.
